Comté Extra Vieux


One of the first cheeses to receive

Appellation d'origine contrôlée, this unpasterurised French cheese belongs to the family of gryuère cheeses.

It has a strong & slightly sweet flavour reminsicent of fermented pears, with a relatively hard but flexible texture. Milk from Monbèliade or French Simmental cows fed on fresh, natural feed, is skimmed & pressed and then matured for 18 months or more to develop its full spectrum of flavours.

Comté is great with Pinot Noir or Beaujolais. We like to melt it and spread its over a piece of fresh baguette,
