The only traditional, raw brie style cheese made in the UK, and it's from right here in Suffolk.
Baron Bigod is handmade in small batches at Fen Farm Dairy, Bungay by the Crickmore family. One of only a handful of cheeses in the world that it still made by the farmer on the farm.
The Crickmore's herd of Montbeliarde cows graze on a rich variety of grasses & herbs growing on Stow Fen, an unsual Basin marsh unique to the Waveney valley. The Montbeliarde breed are happiest when fed on a diet of grass and homegrown hay, and happy cows produce better milk. The relaxed lifestyle, and excellent diet of the Crickmore's herd is evident in the unique flavours and characteristics of their cheese.
The cheese making process begins very early in the morning so that the raw, unpasteurised milk, straight from the cows, is still warm - ideal for cheesemaking. After ageing for up to 8 weeks in a cave-like environment, this delicious cheese has a creamy white, bloomy rind and long lasting flavours of warm earth and mushroom. Its texture is decadently smooth and silky with a rich, golden curd.
We like to enjoy Baron Bigod on a crusty artisan baguette with a big glass of Bordeaux.
