A cheese protected by DenominaciĆ³n de Origen, Machego Diaz Miguel is produced in the La Mancha region of Spain using raw, unpastuerised milk from Manchega sheep.

The cheese has a firm, compact consistency and a caramel and buttery flavour, with a distinct acidity.

The characteristic zig zag pattern around the outside of the cheese comes from the traditional use of grass moulds.

We like to enjoy Manchego with a glass of dry sherry, or shaved on top of a crisp salad.
